When you think of Christmas, your mind drifts to happy times with family, lots of snow outside, twinkling lights, hot chocolate and cookies by the fire....and food.
Lots of it.
Tables graced with sparkling candles, savory ham or turkey (or both!), delicious sides, and gobs of desserts.
And if you're lucky, several different types of cheesecake.
Because if you are like me, that's all that's on your wishlist this year.
Oh yes my friends.
It's one monsterous feast fit for a king.
Or queen. :o)
But we are not going to talk about Christmas dinner today.
Nopers.
Instead, my mind is thinking of Christmas breakfast!
It's where the festivities of the day all begin folks.
So it's gotta be good!
Whether you eat first thing in the morning before presents, or a late brunch after every last gift has been opened, it calls for something special.
Like ooey gooey cinnamon rolls.
Or these oatmeal waffles with apple cinnamon topping that just scream Christmas.
Or maybe you have a hubby like I do who prefers a heartier morning meal like my savory breakfast pie.

This year, we are going to stick with some family favorites, and enjoy homemade sausage, scrambled cheesy eggs, and the most to-die-for-delicious hashbrown casserole you have ever tasted in your life.
Seriously.
So full of creamy goodness, loaded with cheese, and absolutely just like Cracker Barrel's hashbrown casserole, only 500 time better.
It really is the ultimate breakfast side dish ever.
Ever.
Ever.
If you are looking for a special something to serve with your Christmas breakfast/brunch, I guarantee this is it.
Baked Hashbrowns
2 lbs frozen shredded hashbrowns
1/2 cup melted butter
3/4 tsp salt
1/4 tsp pepper
1 can cream soup (homemade makes it extra creamy :o)
2-3 cups of cheddar
1/2 tsp onion powder
2 cups sour cream
Mix everything together and spread in a 9x13" baking dish. Bake at 350 for 1 hour or until golden.
