If you are looking for a change up in your breakfast routine, but still want a crowd pleaser that is so delectably, melt-in-your mouth scrumptious, then this my friend, is the recipe for you.
A buttery, flaky, pastry crust, stuffed with a zippy filling full of sausage, gravy, and eggs, it is totally worth the bit of extra time it takes to put this together.
I could easily eat 2 big slices of this breakfast pie, bright and early in the morning. And being that I'm not a breakfast person, that's saying something!

Breakfast Pie

A buttery, flaky, pastry crust, stuffed with a zippy filling full of sausage, gravy, and eggs, it is totally worth the bit of extra time it takes to put this together.

Breakfast Pie
Pastry Crust:
2 and 1/2 cups flour
1/2 Tbsp sugar
1 tsp salt
3/4 cup butter
1/4 cup warm water
Filling:
1 Tbsp butter
5 eggs
1/4 c milk
salt and pepper
1 lb sausage
3 Tbsp flour
1 and 1/2 cups milk
1 and 1/2 cups cheddar
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1/2 tsp paprika
Mix the crust and chill for 20 minutes. Meanwhile, prepare the filling.
For filling: Melt the butter in a skillet. Whish together eggs and milk, then pour into the skillet. Season with salt and pepper, cooking completely. Remove from the skillet, and then brown your sausage. Remove from the skillet and add to the eggs. In the same skillet yet again, stir in the flour and cook for 2 minutes. Whisk in the milk, and boil until thick. Remove from heat, and add the cheddar and seasonings. Mix together with the eggs and sausage.
Roll out and press half of the chilled pie crust into a greased pie dish. Pour in the filling, and top with the other half of the crust. Cut a few vent holes in the top, and bake at 400 degrees for 15 to 20 minutes, or until golden brown.
This can easily be prepared the night before, and ready to bake first thing in the morning. It also freezes extremely well, and then can be thawed and baked as well! Trust me, I'm all for the easy.
